Surprise! Coming to you on a Thursday with some long weekend baking ideas so you have a little time to get any ingredients you need if you decide to make any of these delicious bakes.There are three major religious holidays being observed at the moment, and while all are observed in different ways, food does seem to be a common thread between us all. The recipes below focus more on Easter as that is what I personally have most experience with, but for more recipe inspiration I would recommend Alice Zaslavsy’s ABC News Breakfast segment this week about dates and how they can be used for all three major holidays. I am also really enjoying the Passover recipes being shared over on Instagram by Leah Koenig and Shannon Sarna and the recipes for Iftar during Ramadan being shared by Lina of The Lebanese Plate and Kiran of Mirchi Tales. 1.Carrot Cupcakes with Vanilla Buttercream (pictured below)- I created these easy carrot cupcakes for Easter last year with The Healthy Baker. They are easy to decorate with kids, all you need are some colourful or Easter themed sprinkles. 2. Carrot Cake with Biscoff Buttercream - For a larger carrot cake that will feed a few people, or act as a table centrepiece this Carrot Cake with Biscoff Buttercream is a great option. Again it’s easy to decorate with any Easter themed sprinkles or small colourful Easter eggs, and will be a great addition to what might otherwise be a chocolate filled gathering. 3. Easter Bunny Cupcakes (pictured above)- I created these for Grounded Pleasures a couple of years ago and they remain one of my favourite recipes. The white chocolate buttercream is absolutely delicious and using cut marshmallows to create the bunny ears is a sweet touch. 4. Hot Cross Buns - If you are ever going to make hot cross buns, this weekend would be the time to do it! This recipe is my current favourite, however if you don’t feel like rolling the dough into balls to form the buns, you can make the recipe into one larger loaf as I did in this recipe. 5. Rose Rocky Road Easter Eggs - These homemade Easter eggs would make great gifts, and you can of course use different types of chocolate and leave out the rose flavour and pink colour.
