Most recipes start with some kind of inspiration. It might be another recipe, an ingredient or a food memory.

The Lemonade Scones in my cookbook Everyday Bakes are inspired in a way by my Grandma. Many of the recipes in my cookbook are influenced by her in some way. More specifically, this recipe was inspired by a charity cookbook she gifted me in 1999.

My Grandma did a lot of volunteer work, and one place she volunteered at was Meals on Wheels. In 1999, they put together a cookbook and my Grandma donated a recipe. The book was launched towards the end of 1999 by cookbook author and cooking teacher Gretta Anna Teplitzky who was well known in Sydney at the time for her cooking school.

Grandma got myself and one of my cousins a copy, and they were signed by Gretta Anna - something that was a bit lost on me at the time, but I now understand the significance! My Grandma even added her notes to my copy of the book for a couple of recipes that she’d already tried and thought needed some adaptation!

While for some reason my childhood memory was that the lemonade scone recipe in the book was her’s, she actually contributed a fish recipe and the scone recipe was from someone else. I’m not sure why I always associated this Meals on Wheels cookbook with lemonade scones from my Grandma, however when I was looking for a quick and easy scone recipe for my own book I remembered this charity cookbook she gave me.

When I tested the recipe, the scone dough was far too wet to handle so I adapted it by adding another whole cup of flour. I also added vanilla bean paste to the mix. I’ve found that buttermilk (the kind that is a byproduct of the butter making process like this one), pouring cream or full cream milk work as the liquid in this recipe, which makes it even easier to make them as you don’t have to be too specific about the ingredients you need.

Each time I make these scones I am still surprised at how easy and quick they are to make, and since they freeze well, a little time spent making them now, means scones for your future self later!
